Hoc phospholipasum biologicum est agens ignitum, adhibitis modis excellentibus liquidis fermenti profundae, ultrafiltrationis et aliis processibus. Est enzyme quod glycerolum phospholipidorum in organismis viventibus hydrolyzare potest. Distingui potest in 5 categorias secundum varias positiones phospholipidorum hydrolyticorum: phospholipasis A1, phospholipasis A2, phospholipase B, phospholipase C, phospholipase D, hoc productum pertinet ad phospholipasem B, phospholipasem amplam temperiem et pH ambitum habet; late in cibo usus est industria. Phospholipasus speciatim cum phospholipidis in oleo redundat ut gliam in alias fractiones in oleo et aqua solubiles convertat.
